My experience with U-Haul is they're not going to rent you a car trailer or dolly with that towing vehicle. You can test for yourself on their website.

Must be equipped with a full hard top if it is a sport utility type vehicle. If the top or any portion of the top is removed, or is not a hard top, your sport utility type vehicle cannot be used for towing U-Haul equipment. A full hard top must be in place. - CHECK
Tow vehicle and trailer lighting must be operational at all times, day and night. All U-Haul trailers and towing are wired with a 4-way flat light connector. - CHECK (IF JEEP IS IN GOOD SHAPE THIS IS A NO BRAINER)
Must weigh at least 750 lbs. more than the vehicle being towed - CHECK
Must have Class 2 tow hitch (3,500 lbs. minimum weight-carrying rating) - CHECK (IF YOU HAVE A REESE HITCH)
Must have 1-7/8" or 2" hitch ball (3,500 lbs. minimum) - CHECK (OR GRAB ONE. THEYRE CHEAP)
Must not exceed maximum allowable hitch ball height of 25" - CHECK
Must have external mirrors on both sides - CHECK
Must have fully operational lighting - CHECK (AGAIN, IF YOURE DRIVING IT ALL LIGHTS SHOULD WORK)
Maximum recommended speed is 55 MPH - DEPENDENT ON DRIVER
Load trailers heavier in front. - DEPENDENT ON DRIVER
Reduce normal driving speed. - DEPENDENT ON DRIVER
Wear a seatbelt. - DUH!!!

I see no reason they wouldnt.

I'd be selling the corolla cheap where it sits... Cutting my losses, driving my Jeep home (without fear of screwing up another rig) and replacing the DD car...

Uhaul will NOT rent you a "car hauler" with an XJ, but they will rent you a tow dolly.
I needed to tow one of my cars about 10 miles round trip. Wanted the full-size trailer but they would NOT rent it to me, even when I said I was towing an 89 Civic LX (Curb weight is a ridiculously low 1700 lbs).
Had zero issues hooking up a car dolly though.

WE MADE IT!
We finally made it to Washington State a few weeks ago, I just kept forgetting to update! The Jeep was such a trooper, no problems at all! Thanks everyone for the awesome advice! We wont be towing that distance ever again lol 4 days and 2,000 miles later... that Jeep needs a long long rest.
