From what my buddy said its not hard at all, just make it street legal and have a Highway Patrol inspect it for road use. then you can take off the OHV tag and register it for use on the street. sounded pretty simple to me. Given the vehicle isn't hard to make street legal again.

the 02 sensor just fine tunes the fuel trims, I don;t see it causing your symptoms... but its not a hard swap. could be the coolant temp sensor (for the ecm) if it always thinks its cold it will run semi ok and bog with accel/die as it warms up. From what you said earlier, it sounds like there is a vacuum line/leak problem. found any vacuum line diagrams? does the fuel pressure regulator have vacuum so it bumps pressure off idle.
depends on how they are built... Cory's is nice, I have never really been a fan of Sami's... but they can be cool when built right like any other rig.
from what I have seen OHV is simple, easy and not a hard proses other then the trailer and no street driving.
As far as roof/door, the roof would be a must for me, but a canvas top will take care of that, the door your could make some fabric snap on half doors to limit the wind/debrie in the wet months. I don't mind warm cloths and being outside... but I can see how that would be a turn off....

so on the trail today my fuse blew for the aux fan... i ended up wiring up the fan straight to the battery and it kept me at a cool 190 or so the whole trail. i guess the hood spacers helped a little. i smashed up my passenger side rockers a bit too here's some pics, the first two are where i smashed my rocker panel, theres a nice little cabin at the top of the trail, probably right in the middle of the whole trail with a lot of carvings inside it, so i added to it
