SKIM Programming Question
I just picked up a 2001 Cherokee and it came with one original Jeep key, and one ILCO copy—both work. I am familiar with SKIM, I have read the instructions on how to self program a key. Here's my question:
Do I need two ORIGINAL keys to program a new chipped key, or will my one original and one programmed copy work?

You need two working, original or otherwise, programmed keys to be able to program a new one your own. Only one key means a trip to the dealership or a locksmith.
