Either 2 or 4, depending on if it is a Federal or CA emissions pkg.
But definitely NOT 1. You missed the post cat sensor, unless somebody removed it.

there is about 4 inchs of pipe after my cat then it goes to my aftermarket muffler, and im not seeing a o2 sensor or even a hole for one after the cat.

Then someone has put in a Cat without a port for it. You should have one right behind it.

So if there are 4 it means the XJ is a CA emissions package? I've got a 2001 with 4 O2 sensors. I'm pretty sure the vehicle was originally sold from a dealership in IN.

As 49erRider said, sounds like You have a replacement cat without an o2 sensor. Hopefully the PO did not cut the wire harness.

Gotta get under it and start lookin'. There's a factory wiring plug-in up high, unless that's been ripped out/cut too.
